Baked Fish and Chips
2 eggs, lightly beaten
1½ pounds pollock or cod, cut into 3 by 1½-inch strips
2 teaspoons kosher salt
¾ cup all-purpose flour
1 teaspoon freshly ground black pepper
1½ cups panko bread crumbs
1 teaspoon paprika
⅓ cup olive oil
4 or 5 large Russet potatoes, washed, dried and thinly sliced
1.Preheat the microwave oven to 425° and place a baking sheet in it. Grease another baking sheet generously with nonstick spray.
2.To make the chips take little olive oil and toss the potatoes in it just to coat it with oil, transfer it on the preheated ungreased baking sheet and bake till it becomes golden and crispy for 20 to 25 minutes. After removing it from the oven sprinkle salt on it.
3.Now to make the fish dry it with paper towels. Take a medium bowl and mix flour with salt, paprika and pepper. Take beaten egg in a small bowl and bread crumbs in another bowl.
4.Put the fish in the flour, then dip it into the egg and then coat it in the bread crumbs. Place it on the greased baking sheet and bake it for 10 to 15 minutes till the crust is golden and the fish is cooked properly.
- To serve, line a plate with parchment paper and put few pieces of fish into it and fries. Serve it with malt vinegar for dipping.
