1 cup split and husked dhuli urad
3 cups rice – preferably par boiled (sela)
2 tsp salt
1.Wash rice and dal and soak them in water separately for 5-6 hours.
2.Grind the dal to make a smooth paste. Grind the rice coarsely enough as if the texture should be felt like a fine sand.
3.Mix together rice and dal along with salt, add water in it to form a batter of dropping consistency.
4.Cover the batter and keep it in a warm place so that it will ferment overnight and give a spongy batter.
5.Pour the batter in idli-maker, steam it and serve the idlis hot.
