Makhni Paneer Biryani
250 gm paneer cubes
1/2 cup chopped mint and coriander
1/2 cup almond slivers
1 cup fried onions
6 cups cooked Basmati rice
Salt to taste
1/2 cup cream
1/4 cup cashew paste
1 tsp sugar
1/2 tsp cardamom powder
1 tsp tandoori masala
1 tsp cumin-coriander powder
1 tsp turmeric powder
1 Tbsp ginger, peeled and chopped
3-4 cloves garlic
2 to 3 green chillies
2 cups fresh tomato puree
3 Tbsp butter
1 large onion, chopped coarsely
2 Tbsp whole spices
3 Tbsp ghee/ clarified butter
1.Heat ghee in a pan and sear paneer in it, season the paneer to taste and keep it aside.
2.Now take the same pan, add the whole spices like black perrercorns, black cardamom, cloves, cinnamon, green cardamom, mace and allow them to crackle.
3.Add green chillies, chopped onions, ginger, garlic and let it fry for 2 minutes.
4.Now add the powdered masalas and tomato puree and let it simmer for about 10 minutes.
5.Add the cashewnut paste and cream.
6.Once it is done add paneer in the gravy and let it simmer for 6-8minutes.
7.Grease a baking dish or handi and make layers of paneer and rice alternatively. Sprinkle fried onions, fresh mint, coriander, nuts and cover it with aluminum foil, heat it gently for 25 minutes and serve it hot.
