Paneer Goli Biryani
250 gm paneer
2 Tbsp ghee
1/2 tsp saffron soaked in 1 cup milk
1 tsp salt or to taste
1/8 tsp cinnamon, powdered
1/2 tsp black cumin
2 cups rice-cleaned and soaked in water for 1 hour
1/2 cup onions-browned crisp and brown
Oil for deep frying
1/4 tsp powdered black pepper
1 tsp salt
1 tsp garlic-ginger paste
1 slice bread, crusts removed, and grated
1.Crumble the paneer and mix it with garlic ginger paste, bread, black pepper and salt.
2.Make small balls of the mixture and refrigerate it for 1 hour.
3.Heat oil and deep fry the paneer balls over high heat till it turns golden brown in color.
4.Heat 2 tbsp of ghee in a pan, add cardamom, cinnamon, cumin and clove. Mix it for some time then add drained rice and salt in it.
5.Add two and half cups of water, allow it to boil then lower the flame, cover the rice and let it cook for 8 minutes. Once the rice is almost done turn off the flame and leave the pan on the stove.
6.30 minutes before serving divide rice and paneer balls into half each.
7.Start layering it first take half of the fried balls in a pan, cover it with half of the rice, sprinkle half of the saffron flavored milk on it, again the remaining paneer layer and finally remaining half of the rice and the saffron milk over it.
8.Seal the pan with flour dough and place the pan on a tawa over low heat for about half an hour.
9.Paneer goli biryani is ready to serve. Serve it hot.
