Paneer Kadhai Masala and Ajwain Rotis

Ingredients
1 cup refined flour (maida)
2 lemons
5 Tbsp ghee (clarified butter)
3 pieces ginger, chopped
6 green chillies, chopped
1 bunch fresh coriander
2 tsp coriander powder
1 tsp coriander seeds
1 tsp cumin seeds
1 tsp red chilli flakes
1 cup vegetable stock
6 tomatoes, chopped
1 tsp garlic paste
Salt to taste
1 tsp red chilli powder
2 tsp cumin seeds (jeera)
3 cups oil
800 g paneer
2 tsp carom seeds (ajwain)
2 cups wheat flour (atta)
Procedure:
1.Take atta, maida and carom seeds to make a dough for roti and keep it aside.
2.Heat oil in a kadhai, add cumin seeds, salt, red chilli powder fry it for some time then add garlic paste in it.
3.Now add vegetable stock and tomatoes and let it cook properly.
4.Make pieces of paneer and spice it with coriander seeds, cumin seeds, chilli flakes, salt and coriander powder and keep it aside for some time.
5.Add green chilli, fresh coriander, ginger and a pinch of all other spices in the kadhai mixture. As the sauce becomes thick add paneer and cook it properly on a high flame.
6.Now from the dough make small rotis and fry them.
7.Finally add a spoon of ghee and garnish it with lemon and serve the dish.
