Sabziyon Ki Tehri
1 cup rice
1/2 cup cream
1 tsp mace powder
1 tsp green cardamom powder
3 tsp sliced ginger
8-10 sliced green chillies
1 tsp turmeric powder
2 tsp yellow chilli powder
1/2 cup thick yoghurt
1/2 cup kasoori methi leaves
2 tsp garlic paste
2 tsp cumin seeds
1 tbs mustard oil
100 gm fresh peas
1.Wash rice properly till the water clears and soak it in double amount of water for about 20 minutes.
2.Wash carrots, potatoes, beans; peel them and cut them into small diagonal pieces.
3.In a pan boil water, add salt in it and blanch carrots, potatoes, beans and peas separately for 2-3 minutes. As they are boiled rinse them in cold water.
4.In a vessel heat mustard oil, add cumin seeds, garlic paste, kasoori methi leaves and saute them well.
5.Now add water and let it cook for a minute, then add salt and vegetables and cook it for some time.
6.Add yogurt, turmeric powder, yellow chilli powder, cook it for 5 to 10 minutes, then add water and let it boil for some time.
7.Now add ginger, mace powder, green chillies, green cardamom powder, rice and stir it gently.
8.Lower the heat, cover and cook it for some time. Once cooked add the cream mix it and serve it hot.
