Kerala Chicken Roast
1 Kg Chicken
3-5 Green chillies
To taste Salt
5 Garlic cloves
1 tsp Vinegar/lemon juice
1/4 tsp Coriander powder
1/4 tsp Chilli powder
1/4 tsp Turmeric powder
1 lemon Lemon juice
1/4 tsp Pepper powder
1/4 tsp Garam masala powder
3 sprigs Curry leaves
2 Green chillies (slit)
1 Large Tomato, blanched, remove skin & make puree
3 Medium Onions
How to make Kerala Chicken Roast:
1.Take all the ingredients of marination, grind them all and make a paste.
2.Wash the chicken properly, drain water from it and add the paste and keep it aside for marination for an hour.
3.Crispy fry thin slices of onion in hot oil and keep it aside.
4.In the same oil add the chicken pieces, cover the pan so that the chicken gets cooked from inside but do not allow it become brown in color. Once done drain them and keep them aside.
5.In a pan heat 2 tbsp of oil, add slit green chillies, curry leaves and saute it for a minute. (You can use the same oil in which the chicken was fried as it will enhance its flavour).
6.Now add the tomato puree in it and saute for a minute.
7.Then add the fried chicken, roast it till it becomes dry and make sure that the chicken gets coated well with the tomato paste.
8.Once done sprinkle pepper powder, garam masala and mix it properly.
9.Then add lemon juice, mix it properly, check if the salt is required and add little salt if needed.
10.Add the fried onions, mix it and the dish is ready to serve.
