Paneer Bhurji

Ingredients
500 gm paneer
Salt
2 Tbsp chopped coriander leaves
1 tsp cumin seed powder
1 tsp red chilli powder
1/2 cup cream
1 cup cashew nut paste
1 tsp Kasuri methi powder
1 chopped onion
2 tsp chopped garlic & ginger
Chopped green chillies
2 tsp cumin seeds
1/2 tsp ginger paste
3 tsp garlic paste
2 black pepper corns
4-5 cloves
1 piece mace
3 whole red chillies
2 bay leaves
2 Tbsp desi ghee
1 kg tomatoes
Little bit of lemon juice
For marination:
1 tsp red chilli powder
2 tsp garlic paste
2 tsp ginger
Procedure:
1.Divide the paneer into two parts, cut the half portion into cubes and crumble the other half. Take ginger-garlic paste, red chilli powder, salt and marinate the cubes of paneer with this mixture.
2.In a pan heat desi ghee, add whole red chillies, green cardamoms, bay leaves, ginger paste, garlic paste, black peppercorns, mace, cloves and saute it till the garlic turns brown.
3.Add tomatoes sliced in quarters and salt, cook it on low heat. Once done grind and strain it.
4.Take the cashews, blend it and add the tomato gravy in it. Cook this for some time on low heat and add crumbled paneer and mix it properly.
5.Take a pan, heat ghee and add chopped green chillies, cumin seeds, chopped ginger, chopped garlic and fry till it turns brown.
6.Now add onions, once it turns golden brown add cumin powder, chilli powder, tomato-cashew paste, kasuri methi powder, little bit of lemon juice, chopped green chillies, red chilli powder, cream and cook it for some time.
7.Add cubes of paneer and let it cook for a minute on low heat. Then add the crumbled paneer mix, cook it for another 1 minute and garnish it with coriander leaves and serve hot.
