1 cup lentils (toor dal or arhar)
1 Tbsp chopped coriander leaves
2 Tbsp oil
1 Tbsp salt
1 big onion, cut into quarters
1 cup mixed vegetables
2-3 whole dry red peppers
7-8 leaves of curry leaves
2 tsp mustard seeds
3 Tbsp thick tamarind pulp or 1 tsp tamarind concentrate
3 Tbsp sambar masala
1 Tbsp sugar
1.Wash the dal and cook it with salt till it gets completely tender, with no remains of grains.
2.Then add sambar masala, vegetables including onions, sugar, cook till the vegetables are done then add tamarind in it and mix.
3.Heat oil in a pan, add mustard seeds and allow it to splutter. Now add whole red peppers, curry leaves, turn it around for some time and add the dal mixture in it.
4.Bring the dal to boil, then let it simmer for another 5 minutes.
5.Sambar is ready. Garnish it with coriander leaves and serve it hot.
